MARINATED PORK FILLET

Pork fillet contains very little fat, so we must be careful not to overcook it, because the fillet is already marinated and you do not need additional marinade. Heat the grill to a medium temperature (200 degrees). Grill the marinated meat for approx. 20 minutes i.e. until the internal temperature reaches 65 degrees. Let the grilled meat rest for a few minutes before we cut it into medallions and serve.

Picanha

Picanha steak has a characteristic fatty cap. Carefully cut the fat and add a lot of salt. Grill over a moderate indirect heat on a grill or skillet, 4 minutes per side or until the central temperature reaches 54-56 degrees Celsius. Serve with chimichurri sauce.
